The problem with doing what you described (called a proportional controller) is that it’s completely undamped which results in “ringing” which is oscillation about some natural frequency. Best case scenario your control system is ringing and never really operating nominally. Worst case scenario your car is “ringing”…

I don’t know where you heard that. Power is just torque x rotational velocity. Since this is direct drive, wheel torque x wheel speed = motor torque x motor speed - driveline losses.
Those are two very different things. While, yes, they do have the ability to control how much voltage is applied at any given time, the control system needed to determine when that given time is and how much to change that voltage is quite a bit more complex.
