There are many theories, the more mundane of which are possible worship sites or astronomical observatories. The issue is that no biological remains have ever been found in a pyramid, including those most recently discovered (over 100 by now throughout Egypt) that were intact and not disturbed by grave-robbers.

No one really knows. Hauling stones up a ramp is out, as the ramp would have been at such a low angle (to allow the blocks to be moved) that the ramp would be significantly larger than the pyramid. No such evidence of ramps have been found, and no known method tried today has been successful in replicating the process.
