I'm just pointing out that the "thanks to the off days he won't miss a start" part doesn't make sense. It's true that the Red Sox won't need to bring in another starter to replace him, but Dempster will still be sitting out a game he'd otherwise have started.

Indeed, as somebody who actually watches a fair amount of hockey (read: a Canadian), the command centre reviews typically take no time at all, unless something particularly crazy happens (e.g. it's plainly obvious the puck went in, but it's obscured from every camera angle).

This is completely incorrect. If you stand differently, your strike zone moves accordingly. This is why the PITCHf/x system tracks the strike zone on a per-pitch basis; because it moves with each pitch.
