I think there are two main culprits for the lack of vegetable eating in the US.

How are you cooking the broccoli? I hated the limp extra boiled broccoli my mother used to make until I had broccoli that was blanched and then sauteed with garlic. It's more trouble to make but tastes a lot better and the texture is a lot better. Also you can get fancy with broccolini.
