IIRC Gemini USD (GUSD) is fully backed 1-1 with dollars and is audited, so out of the options I think it’s the safest. Second safest (in my opinion) is DAI, which is _not_ backed by dollars, but is decentralized and automatically adjusts itself to maintain its peg.
Keep in mind that this is just an issue with the underlying infrastructure.
