My most used box is a webserver/git-server/ssh proxy/dvd ripping slave/linux CI slave and a few other things. Plus you can still use the desktop while all that is going on.

There's plenty of usable software. But the wireless drivers are a bitch I'll give you that.
Plus they FINALLY have integrated print dialogs and native pdf support! But can you yet scroll in a window that doesn't have focus? And is the dvd playing functionality still ripped out in the RTM?
Once you go ssd it really doesn't matter what you boot. My OS X install boots in 5s on a sata II ssd, my fiancee's is under 2s on her sataIII ssd.

Sorry I must be missing something, how do you pin say your "my documents" directory to the task bar directly? instead of mashing it into the explorer jump list?
Does the metro screen let you search for files/settings/users/anything in addition to applications? Is the animation so fast that you can begin typing as soon as you hit the windows key and hit enter after you are done to get what you wanted to launch or are you waiting?
If you don't want a full fledged server it'd be easier to adapt the desktop version of ubuntu to your needs. I added apache, git-core, sshd, and a few other server daemons to mine for that reason. You'd have to patch and recompile your kernel. It's one of those things about linux that make their way into the zeitgeist and give linux a bad name.
Assuming you don't have either drive encrypted (not really related but still relevant) then you should have no issue, just put linux on the ssd and you're golden. You might even be able to read the files on the second drive (linux support for hfs+ is poor but you do get read support pretty reliably with fuse).
